While all of our British fish are delicious, it's difficult to top dover sole cooked in butter in a pan. With so much flavour packed into meat, you don't need to complicate it with 1000 ingredients. Just butter (with a bit of oil to stop it burning), salt, pepper, and a bit of garlic and you're on your way. We've suggested to leave these fish whole to cook either in the pan or in the over, so the meat comes away beautifully on the bone.
