Don't waste your money on pre-made blinis this Christmas. They're incredibly easy to make. Topped with our Ullapool Smoked Salmon, you won't find a better bite sized hit of omega-3 anywhere.
Ingredients

100g plain flour

1 tsp baking powder
-
1 pinch of salt

150ml milk
-
1 egg, separated
-
25g butter
-
150g ullapool smoked salmon
-
2 tbsp crème fraîche or sour cream

A few sprigs of fresh dill, chopped or left whole

Directions
In a bowl, whisk together the flour, baking powder, and salt. In another bowl, mix the milk, egg yolk, and melted butter. Combine the wet and dry ingredients to make a smooth batter.
Whisk the egg white to soft peaks and gently fold it into the batter. This gives the blinis their lightness.
Heat a non-stick pan over medium heat and brush it with a little butter. Drop in small spoonfuls of batter (about a tablespoon each) and cook for about a minute on each side, until golden and puffed. Keep them warm under a clean tea towel as you cook the rest.
When ready to serve, top each blini with a small spoon of crème fraîche, a ribbon of smoked salmon and a sprig of dill. Finish with a crack of black pepper and a tiny squeeze of lemon if you like.
