Recipe – Sole Meunière

Number 8 of the @pesky_fish series. I’ve made this before with fillets of plaice, but the recipe works well with any flat fish. A super easy one this. Anything drizzled with garlicky butter is going to taste amazing right?
Serves: 1 person
Prep Time: 5 min
Cook Time: 7 min
Total Time: 12 min
1 whole dover sole, skinned and trimmed
1/4 stick of butter
1 garlic clove chopped finely
1. Season the fish with salt and pepper, then dredge in flour.
2. Fill a pan with a healthy glug of olive oil, bring to a high heat, then fry the sole for 2-3 minutes each side.
3. Remove the fish and leave to rest. Meanwhile, in the same pan, melt the butter, add the capers, lemon juice, and garlic. Fry together till the garlic is fragrant, stir in the chopped parsley, then spoon the sauce over the fish. Enjoy
