Skate with Tahini & Mint Sauce

Such a delicate piece of meat needs something fresh and light. This is super easy!

500-750g Skate wing

Olive oil

100ml tahini

Juice of 1/2 lemon

5g fresh mint

1 garlic clove, roughly chopped

Boiling water 80-100ml

Method

Step 1

Season the skate wing with salt and pepper. Place in a pan with olive oil over medium/high heat. Cook for 2-3 minutes on each side.

Step 2

In a blender, add the tahini, lemon juice, mint and garlic, then blend. Slowly add the boiling water until you reach the thickness of double cream.

Step 3

Serve on a plate with a wedge of lemon. Pour the sauce over the skate wing and enjoy.
