Recipe – Skate with Tahini & Mint Sauce

Number 4 of the @pesky_fish series. Pan fried skate wing with mint tahini sauce. Such a delicate piece of meat needs something fresh and light. This is super easy!

Serves: 2 people

500-750g Skate wing
Olive oil
100ml tahini
Juice of 1/2 lemon
5g fresh mint
1 garlic clove, roughly chopped
Boiling water 80-100ml


1. Season the skate wing with salt and pepper. Place in a pan with olive oil over medium/high heat. Cook for 2-3 minutes on each side.

2. In a blender, add the tahini, lemon juice, mint and garlic, then blend. Slowly add the boiling water until you reach the thickness of double cream.

3. Serve on a plate with a wedge of lemon. Pour the sauce over the skate wing and enjoy.
