For anyone who loves cod but knows its not very sustainable, there's only one answer: pollock! Caught by our boats on their rod and lines, these beautiful white meat fish will transform your seafood experiences. Rich, meaty and as sustainable as they come - you can grill, bake and fry pollack in 10 minutes as well as making the most phenomenal fish fingers.
TIP: The only thing we'd possibly suggest is to let the pollack rest for 1-2 days in the fridge once it's arrived at your door. Because the fish is so fresh, it hasn't had a chance to break down any of the amino acids, meaning you don't get the full flavour immediately. You'll notice the difference with a bit of patience.
